Jimenez y Friends is a new rendition stemming from the original Jimenez Burrito Express & Bakery, located across the street from Jones AT&T Stadium on 6th & University.

The Floreses, part of the Jimenez Family that had occupied Jimenez Bakery & Restaurant since 1977, decided to open a burrito shop back in 1992 and were one of the originators of the fast food/burrito shops in Lubbock.

Today, the Flores reinvented the wheel and opened Jimenez y Friends after acquiring Gigi’s Tortilleria in November of 2021. Mary Jimenez-Flores and her son Mark embarked on their journey to change the culinary game in Lubbock.

After many rebrands, the Jimenez family innovates Mexican cuisine with a Texas-style barbecue Mix, saying: “If We Have It, We Will Make It.”
